Ingredients
For the crust (pâte brisée):
2 cups (250 g) all-purpose flour
⅛ tsp salt
½ cup + 1 tbsp (125 g) butter, softened
⅓ cup (80 ml) cold water
For the filling:
3 eggs
¾ cup (200 ml) crème fraîche
¾ cup (200 ml) milk
7 oz (200 g) lardons or bacon
1 cup (100 g) shredded cheese
Salt, pepper, and nutmeg (to taste)
Bake: 45–50 min at 350 °F (180 °C), until golden and puffed.
Let it rest before slicing — it will rise beautifully, then settle as it cools.
