In this episode of Dessert Person, Claire Saffitz makes Pommes Anna, a classic French potato dish that’s as elegant as it is comforting. Using freshly dug potatoes from her garden, Claire layers thinly sliced potatoes with rosemary-infused butter, garlic, salt, and pepper, then bakes them until crisp and golden on the outside and tender inside.
This recipe is simple, refined, and ideal for the holidays – perfect alongside roast chicken, turkey, or any festive centerpiece. Claire shares her tips for even slicing, layering for the best texture, and how to unmold Pommes Anna beautifully for your table.
If you’re looking for a holiday side that feels both classic and special, this is it.

Love it
The little face on the plate is adorable
It is 'burnt' but its burnt beautifully and appropriately. Pommes Anna is great. I also love Pommes Maxim.
Which gloves is she using on the mandolin?
One of my favorite potato dishes. Make it all the time. 10/10 recommend!

FINALLY someone acknowledges the “sharp vs dull” knife danger fallacy
Thank you for your recipes, Claire.
Quick question, do you think using infusing butter would be a good idea with a Spanish Tortilla dish?
Totally doing this
It looks delicious, Claire. Use the hand guard with the mandoline.
do dodo do do do do do do it's the claire show!
I agree the dark bits are heaven!! 🤤😋
Quick survey: what sides are you excited to make this holiday season?
You can use the potato peelings for soup stock. I wouldn’t waste the minerals !❤️🫶❤️
I cannot watch people use a mandolin without a glove or guide. It makes me so uncomfortable. Thank you Cal!
Always an absolutely fantastic day when we get to witness the greatness that is Savory Person 🙏🏼
Please….what are the words in the intro…Saffitz and her…sun? help scratch my brain
I just want Claire in my life
Bon cuit is the only way!!! Pale is old fashioned or something lol no thx:) color is flavor!!!!
Come for the delicious food, stay for Cauliflower!
This is such a funny episode to watch after watching Anti-Chef's Vincent Price video where he completely bungled the exact same dish
You had me at Potatoes and Butter.
I would disappoint Claire so hard <3
Why not preheat the dutch oven? (you're already preheating the oven, might as well have it in there while that's happening) Wouldn't the potatoes cook more evenly if that was already hot when the whole thing goes into the oven?
Have you tried using sweet potatoes or yams?
Im really suffering with the mandoline part of the video. I really feel you Cal. Thanks god for the glove finally.
Loving this, but please use the f-ing tool for holding the food when using a mandolin slicer. 😡
