One of my all-time favorite French desserts is a tarte Bourdaloue — a pear & almond tart that’s simple, classic, easy, and oh-so-delicious. 🍐✨

I love making this tart because it only takes a few ingredients (most of which you probably already have in your kitchen) and just one bowl! Fresh pears are ideal, but canned pears work beautifully too. Every bite is buttery, nutty, and perfectly sweet — a little slice of Paris at home.

In this video, I’ll show you step by step how to make it, share tips for getting the perfect almond cream, and give you ideas for making it with whatever pears you have on hand.

  1. Dough (for 20cm mold)

    125 grams flour – all purpose or t55
    65 grams cold butter, cut in small cubes
    15 grams almond powder
    40 grams icing sugar
    Pinch of salt
    25 grams of egg

    Rub the flour and butter together till sandy texture. Add the rest of ingredients and mix till combined. Place dough in fridge for 30 minutes. Roll dough between 2 sheets of parchment paper to size of tart pan. Place dough in tart mold, making sure that dough is pushed downward into corners, so it doesn't shrink while baking. Cut off edges, prick all over with a fork then put in fridge or freezer for at least 30 minutes. Bake in a preheated oven at 350F/175C about 10-12 minutes or until just browned.

    Frangipane/ Almond cream

    125 grams of softened butter
    100 grams of sugar
    125 grams of egg – about 3 small eggs
    125 grams of almond flour/powder
    Pinch of salt
    Optional – splash of rum and/or dash of vanilla extract/ & almond extract

    Whisk the butter and sugar, add the egg and salt, and whisk till combined. Then add the almond flour and optional ingredients and mix to combine.

    Poached pears
    1 liter water
    350 grams sugar
    Zest and juice of an orange & lemon
    1 vanilla bean
    4-5 small pears, peeled, halved & cored

    Bring all ingredients except pears to a simmer, add pears, and simmer for about 20-30 minutes till knife can easily be inserted. Take off heat and let cool to room temp.

    Assemble

    Cut pears into 15-20 slices.
    Once tart has par baked and has cooled, add in almond cream, with the middle being slightly taller and smooth out with offset spatula. Place in the pears, pressing them forward. Sprinkle slivered almonds where almond cream is visible and bake at 170C/350F for 25-30 minutes or until almond cream is puffed and set and golden browned!
