Ingredients

For the fries:
Potatoes (large): 2–3
Cornflour (cornstarch): 2–3 tbsp
Water: enough to boil potatoes
Oil: for deep frying

For the spice mix:
1 tsp red chilli powder (adjust to your heat preference)
½ tsp paprika or smoked paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ tsp salt (or to taste)

Garlic Mayo Sauce:
½ cup mayonnaise (regular or light)
2–3 garlic cloves, finely minced or grated (or 1 tsp garlic paste)
1 tsp lemon juice (or lime juice)
½ tsp Dijon mustard (optional)
Salt to taste

Step-by-Step Method

Prepare the Fries:

Peel and cut potatoes into even thin sticks (classic French fry shape).
Bring a pot of water to boil and add the potato sticks.
Boil for 5–6 minutes, just until slightly soft — don’t let them turn mushy.
Drain and let them cool for a few minutes.
Once cool, sprinkle cornflour over the potatoes and toss until evenly coated.
Place them on a tray and refrigerate for 30 minutes — this step helps them crisp up beautifully when fried.

Deep Fry the Fries:

Heat oil in a deep pan or fryer over medium heat (about 170–180°C / 340°F).
Fry the potatoes in small batches — don’t overcrowd the pan.
Cook until golden and crispy, about 3–5 minutes per batch.
Remove and drain on paper towels to remove excess oil.

Add the Spice:

In a bowl, mix together all the spice mix ingredients.
While the fries are still hot, sprinkle the spice mix over them.
Toss well until every fry is evenly coated with the spicy seasoning.

Make the Garlic Mayo Sauce:

In a small bowl, combine mayonnaise, minced garlic, lemon juice, and Dijon mustard.
Whisk or stir until smooth and creamy.
Let it sit for 10–15 minutes to allow the garlic flavour to develop.
