Cottage Cheese French Onion Bake (Keto, High-Protein)

A rich, bubbling French onion–inspired bake that swaps bread and cream for cottage cheese. Pure comfort, keto-style.

🧈 Ingredients (1–2 servings)

1 tbsp butter

2 medium yellow onions, thinly sliced (~2 cups)

1 tsp beef broth concentrate or Better Than Bouillon

½ tsp Worcestershire sauce

¼ tsp garlic powder

Salt and pepper to taste

¾ cup cottage cheese

½ cup shredded Gruyère (blend with cottage cheese)

¼ cup mozzarella (for topping)

Fresh thyme for garnish (optional)

🔥 Instructions

Caramelize the onions
Melt butter in a skillet over medium-low heat. Add onions and salt. Stir often for 20–25 minutes until deep golden brown.
Add beef base, Worcestershire, garlic powder, and pepper. Deglaze with 1 tbsp water if needed.

Blend the base
In a Ninja Chop or blender, blend cottage cheese and Gruyère until smooth and creamy.

Combine
Fold the caramelized onions into the cheese mixture. Don’t overmix — you want streaks of onion showing.

Bake
Spoon mixture into a greased ramekin. Top with mozzarella.
Bake at 400°F for 10–12 minutes, then broil 1–2 minutes until the top is golden and bubbly.

Serve
Sprinkle thyme. Break through the cheese crust with your spoon for that money shot.

  1. Loved the soup, but don't be naive. Chatgpt isn't getting dumber. It's in constant revision, and what it used to give without restriction, it's now being hit left and right with rules and changes, including a recent lawsuit settlement over providing information on sources that could be interpreted as a negative contribution to a group because of their religious affiliation. Bottom line: AI's can't be stupid. They're not sentient. However, the creators control what information they provide. It's the mind of the AI creators and developers we should be aware – concerned about.

  4. Tip for onion cutting. To have more uniform slices so things cook at the same rate, spin and slice along the height so all slices are roughly the same length. the rainbow cuts are lovely and fun, but will cook at different speeds due to size differences. Neat recipe looks quite yummy, never enough cheese and this one hits the cheese button quite nicely

  5. I don't know… I'm thinking I would have split the onion/cheese mixture between the 2 ramakins and then added some beef broth before topping them with the additional cheese. Less calories and less carbs and a bit closer to the traditional French Onion Soup (sans the big fat crouton). Still, worth a try. Thanks!

  7. Do many people here have much luck staying in keto with that much onion? I’ve cut the amount of onion in recipes in half because of the carbs. I’m trying this though.

  8. Please tell me when you put that Lamb down and then went to pick up the spices and the spoon that you washed your hands in between…… that drives me crazy. If you didn’t, you can terminate it every single container and even if you did pause it and wash your hands you should state that you wash your hands.
