This is my version of Tarte Tatin:
✨Hand laminated dough using croissant recipe from my website⬇️⬇️⬇️

✨Ribbon sliced apples using attachment for mixer
✨Caramel
– 3 tablespoons water,
– ½ cup sugar,
– 3 tablespoons unsalted butter
Melt sugar and water and cook until amber color, add butter, until all incorporated.

Directions:
– Do 1 double and 1 single fold for the laminated dough. Roll 8 mm thick. Cut 10cm circles. Let them proof.
– Slice the apples. Roll them into a roll.
– Prepare the caramel.
– Use 8cm mold, cover the bottom with foil. Pot 1 tbs of caramel onto the bottom, place apple roll in. Bake for 30 min at 375F
– Remove apples from the pan, place them on top of proofed puff pastry circles. Sprinkle some sugar on top.
– Bake at 375F for 18 min.
– Enjoy with vanilla ice cream on top.

  1. Tarte tatin literally means that it's cooked upside down… It means upsidedown pie in french. Other than that it looks really delicious 😋

  3. There is a much better version of this on youtube. Also its no tarte tatin when you not bake it upside down, thats why its called tarte tatin.

  4. I just remember about Noah from Vanitas no Carte and his blissed eyes looking to tarte tatin, his favorite dessert. So, that's how it's made it.

  5. I think you could make a really good garnish for this. Maybe a snapdragon flower? No particular reason.
