Not unique and not their innovation. Wine makers have used this technique for centuries to disgorge sparkling wines. BTW: If you are making a mess opening a bottle of Sparkling wine you are doing it wrong. Watch a video on the PROPER (if less fun) way to open Sparkling wine
This is not to avoid making a mess it's because expensive bottle tend to have sediment that collects at the bottom of a bottle so they let it settle upside down and then let the natural forces of opening the bottle to push out those extra dead yeasts you don't want to have settled in your glass
