    Is mache / lamb’s lettuce the same as arugula/ rocket? It’s hard to tell.
    Also, thank you for showing us how you keep the extra spoons of broth or extra fat from simmering to repurpose in other recipes. I sometimes hesitate to do so but it’s really a practical idea.

  9. Also, I like how you simmer foods – chicken thighs, leeks, endive- before roasting or making gratin- that’s a really good way to ensure softness. I tend to either simmer or bake – buts it’s so useful to combine both. Thanks for a great tip!

  10. Hi, there! Just a gentle reminder for everyone following – I hope no one makes these recipes and accidentally uses heavy cream. Creme Fraiche is definitely different and it’s not sour cream either. If you’re in the US, you’re going to look for Creme Fraiche in the stores — just that. If you are having issues finding it, which can be the case in some areas, you can use cultured buttermilk as a starter culture (you need the cultures from the buttermilk and not exactly the buttermilk itself) and heavy whipping cream (highest fat content you can get) to make it yourself. If you can’t find buttermilk , use full fat whole milk yogurt. Creme Fraiche has a really high fat content. You can find the recipe online for sure. Hope you are able to find it in the store!

  13. Excellentes recettes d'automne, un vrai miracle ! Ma préférée est le magret de canard et les figues rôties. La nouveauté (pour moi) est l'association des deux, je suis ravie ! Désormais, je préparerai aussi la vinaigrette séparément. Je fais généralement de la salade grecque jusqu'à l'apparition des cornichons en novembre. Dans les plats à base de crème fraîche, surtout ceux au poulet, j'ajoute de l'aneth frais. Merci beaucoup pour vos conseils et astuces, et bonne soirée! 🏵🏵🏵
