What do you mean why? He is the number one chef of the number one Hindu majority country of the world with the highest number of vegetarians and Hinduism reveres vegetarianism. He is cooking for the vegetarian Hindu population all over the world and by the way Hindu vegetarians do not consume eggs unlike the western vegetarians but then they are not vegans either because they consume more dairy than anyone else. So yes my favorite chef is making eggless French toast for the vegetarian Indian living in India and rest of the world.
80% Indian are non vegetarian. Rest are vegetarian.

At least in the original French Toast preparation method, we have eggs as some protein source. In this so-called eggless French Toast, we have only FAT, Sugar and Simple Carbohydrates.

Pleasantly surprised by Jamie Oliver's French Toast. Also kinda funny how the one dish that could've used some kind of jam in the recipe just didn't.
some people in India does not consume egg or meat as part of religious/moral value system. So lot of recipes without egg is innovated here in India. I think this recipe was for those audiences who only eat egg-less cakes.
