  14. Whipped cream chaser…love rhat!

    When I make chocolate mousse, i whisk the egg yolks, a little sugar and water directly over the heat in a heat proof bowl to about 150F. Then I add 70% chocolate. Bar chocolate seems to melt better than morsels. Cool and then add the whipped cream. Save the egg whites for meringues. Serve in individual portions. Works every time.
