Ingredients:

Butter 20gm
olive oil 10ml
Onion 200gm
Garlic 3 cloves
Sugar 1tsp
Refined flour 1tbs
White wine 30ml
Vegetable stock 400ml
Fresh thyme 2 sprigs
Bay leaves 2 nos
White wine vinegar 20ml
Vegan worecestershire sauce 1tbs
Salt pepper to taste
Baguette bread for toppings
Guyere cheese 20gm

Method :

1. Caramelize onions: Sauté sliced onions in butter/oil with a bit of sugar and salt for 30–40 mins until golden brown.
2. Add flavor: Stir in garlic, thyme,bay leaf, and flour. Cook for 1–2 mins.
3. Deglaze: Add white wine to lift browned bits.Add worecestershire sauce(optional) and white wine vinegar and season with salt and pepper to taste, keep it on simmering mode.
4. Simmer: Add veggie broth. Simmer for 20–25 mins.
5. Serve: Pour into bowls, top with toasted bread and cheese. Broil until cheese melts and bubbles.
