5 Potatoes
2-3 Tbsp Cajun Seasoning
2-3 Tbsp Flour
2 Tbsp Oil

150g Butter
150g Flour
4-6 cups Beef Stock/Drippings

Cut your potatoes into wedges and parboil in salted water for 5-7 minutes (until just softening). Drain and place in cold water to stop cooking. Arrange in a single layer on a baking sheet and cool in the fridge for 20-30 minutes. Once cooled, combine fries, seasonings, flour, and oil in a large mixing bowl. Stir until fully coated, then arrange in a single layer and air fry at 400°F for 25 minutes (rotating halfway through).

While potatoes cook, make a roux in a pot using equal parts (by weight) flour and butter. Once the roux is golden, stir in your stock, 1/3 at a time, making sure to fully incorporate before adding more. Let the gravy cook for 3-5 minutes and thicken before serving
