MUSHROOM SOUP YAAAAAAAAS 🍄

Makes 4 portions

Ingredients:
1 onion
2 celery stalks
500g cremini mushrooms
4 garlic cloves
1 tsp fresh or dried rosemary
1 tsp dried thyme
1 tbsp olive oil
100ml dry white wine (replace using 1-2 tsp white wine vinegar at step 6)
400g cooked beans
100g frozen packed spinach
1 can coconut milk
400ml vegetable or mushroom stock

Instructions:

1. Finely chop the onion and celery. Using butter or olive oil fry the onion in a pot on medium heat. Once translucent add celery. Continue to cook until celery has softened.
2. In the meantime, roughly slice the mushrooms. Remove onion and celery from the pot and set aside. Throw in the mushrooms into the pot without any additional oil. Add a generous sprinkle of salt and increase the heat to high.
3. Mix the mushrooms until they begin to release their juices. Once all the juices have evaporated, add 1 tbsp of olive oil. Fry until golden brown.
4. Add back in the onion and celery, add crushed garlic, chopped rosemary, thyme and pepper. Stir until the garlic has browned.
5. Pour in the wine and let it fully reduce.
6. Then add the beans, frozen spinach, coconut milk and the stock. If you want the soup to be extra creamy, blend 1/3 of the beans with coconut milk before adding to the pot. Cover and simmer until the spinach has fully melted.
7. Adjust the seasoning and serve with freshly toasted bread.

    Grass is always greener, but I do love being able to snack on my celery and peanut butter daily.

  3. The problem a lot of people who don’t have access to more mushrooms don’t understand is. They don’t like button mushrooms and they’re the only type of mushroom a lot of people ever run into. I thought I couldn’t stand mushrooms until I had a mushroom soup with like 5 different species and it was so good. Now I make sure I buy oyster mushrooms at the store

  5. I love mushrooms and I love white beans. I totally want to make this while it’s still a little cold in Australia. Just no coconut milk, coconut for me is a dessert only

  6. There is No Butter in meggle 😭 buy the ones from edeka they have real butter (how do i know that? Ive Done the Same mistake…. A Long time….. Till i found out)

  7. I just made this. It was pretty good, but I would have wanted a bit more depth of flavor especially compared to how long it took.

    I might add some diced potatoes to give it some more body.
