📌 Ingredients:
For the shells:
– 45g almond flour
– 55g powdered sugar
– 10g cocoa powder
– 40g egg whites
– 40g granulated sugar

For the filling:
– 90g semi-sweet chocolate
– 60g heavy cream

📌 Instructions:
1. Sift almond flour, powdered sugar, and cocoa powder.
2. Whip egg whites until soft peaks, then slowly add sugar and whip to stiff peaks.
3. Fold the dry mix into the meringue until the batter reaches ribbon stage.
4. Pipe 3cm circles, tap tray to remove bubbles, and let rest for 30 minutes.
5. Bake at 150°C for 15 minutes, then cool completely.
6. Heat cream and pour over chocolate, stir until smooth. Chill for 15 minutes.
7. Pipe ganache onto shells and sandwich.
8. Refrigerate overnight for best texture.
