Ingredients (makes enough soaking liquid for two 1.5~2 inch thick slices)
1 loaf egg bread (challah bread) cut into 1.5~2 inch thick slices
1 cup heavy whipping cream
1 cup sweetened, condensed milk
3 large eggs
1 vanilla bean
2 Tbs unsalted butter
1 pinch salt
mint, for garnish

For the icing
4 oz. softened cream cheese
1 cup powdered sugar
splash of rum (optional)
juice from 2 limes

For the whipped cream
1 cup heavy cream
2 Tbs powdered sugar

Preheat your oven to 350 degrees. Whisk together the heavy cream, condensed milk, eggs, salt and the seeds from one half of the vanilla bean and pour over the slices of bread. Choose a dish that would allow the soaking liquid to come up about halfway up the slices of bread. Soak for 7 minutes per side.

Melt a tablespoon of butter in a saucepan over medium heat and add the bread slices. Cook for two to three minutes per side until golden brown, then after cooking the second side put into the oven for 15 minutes.

For the whipped cream, beat the heavy cream with an electric mixer on high until thickened, then mix in the powdered sugar. For the icing, which the lime juice into the (very) softened cream cheese until combined. Then add rum and powdered sugar and mix until smooth.

For a little hair of the dog muddle 1 oz of lime juice with 3/4 oz simple syrup, 2 slices of lime and mint. Then add 1 1/2 oz of rum and fill the cup with ice. Top it off with club soda and a sprig of mint!

This french toast doesn’t need maple syrup because of the icing, but if you have a sweet tooth like me, it definitely doesn’t hurt! Slicing the bread thick and soaking it for so long makes the inside of the bread smooth and packed with flavor, almost like a bread pudding.
