Crispy za’atar focaccia with herby butter bean aioli
This is how I got over my fear of baking bread at home. Focaccia is the best way to make easy, delicious bread at home because it’s so easy and you don’t need any fancy equipment.
All you’ll need to get is olive oil as it’s the best in the game.
This recipe makes 1 tray – you can use any sides and if you want it taller and bouncier – just use a smaller oven dish instead of a tray with high edges!
Za’atar is my favourite focaccia topping as its savoury and salty and gives enough flavour but not too much to balance

Recipe below makes 1 focaccia
INGREDIENTS – FOCACCIA
4 HEAPED cups plain flour,
1 Tbsp cooking salt
1 sachet or 1 Tbsp dry yeast
1 tsp sugar (any)
2.5 cups warm water
1/2 cup La Espanola olive oil (total, just use bits throughout recipe)
2 Tbsp za’atar
1 Tbsp flakey sea salt
INGREDIENTS – HERBY BUTTER BEAN AIOLI
1 egg yolk
1 tsp dijon mustard
1 lemon juice
2 tsp salt
2 Tbsp La Espanola olive oil
3-4 cloves garlic
1 can butter beans, drained
Handful of parsley and basil
1 ice cube crushed
Method – focaccia:
1. Activate yeast in the warm water with a tsp of sugar
2. Mix flour, salt, yeast, and water in a large bowl with a spatula until sticky and give a couple of stretch and folds. Rub dough with olive oil and cover. Chill COVERED in the fridge for 1-2 days
3. Carefully pull the dough from the bowl’s edges, deflate it, and shape into a rough ball and perform some stretch & folds and let it rest on an oiled tray for 4 hours
4. Preheat oven to 220c. Reduce to 200c as you put the bread in
5. Drizzle oil over dough, rub hands in it, then press fingers into dough to make deep dimples. Stretch to fill pan if you want higher edges rather than crispier
6. Sprinkle za’atar and flaky salt on top.
7. Bake for 30 minutes until golden underneath and edges crispy. Cool on a rack for 10 mins before slicing (or fully if making sandwiches).
Method – dip:
1. Egg yolk, lemon, garlic, salt, dijon, pepper to blender and slowly add in olive oil until combined (emulsified)
2. Add butter beans, herbs and ice cube broken up, blend until smooth and combined for 2-3min
