One of my kids is an athlete who dreams of going pro 🏀. The challenge? Keeping up with the endless demand for protein—without breaking the budget.

This French classic is one of my favorite go-to meals: French Lentils with Sausages (Lentilles Françaises aux Saucisses). It’s hearty, high in protein, affordable, and full of flavor.

The secret? Lentilles du Puy — green lentils from my home region in France 🇫🇷. They stay firm after cooking, have a nutty, earthy taste, and make this dish really special. You can find them here 👉 [Lentilles du Puy link]

Servings: 6 • Time: ~1 hour • Difficulty: Easy • Cost: $17 total ($2.85 per serving)

Ingredients:
1 tbsp olive oil
1 onion, sliced
4 garlic cloves, crushed
1 carrot, sliced
1 (28 oz) can diced tomatoes
2 tsp dried tarragon
1 tsp dried thyme
1 tsp paprika
6 cups vegetable broth
1 tsp salt + pepper
8 beef or chicken sausages

Instructions:
Sauté onion + garlic in olive oil.
Add spices, sausages, and carrots → brown sausages. Remove sausages.
Stir in lentils, tomatoes, and broth. Simmer ~45 min.
Return sausages, simmer 5 more min. Serve hot.
