  1. If you're prissy about the packaging in your food, take a square of parchment bigger than your pan fold it in half until it forms a long thin triangle cut it down until it's just larger than the pans radius finally cut a hole in the centre to encourage slow evaporation.

    Alternatively you can just use a lid placed slightly ajar.
