HACK: put in the whole starter, then when it rises, take a part of the dough back to the jar. (Dough without salt ofc). The starter will be more fed and nurished and you dont need to feed it with another flour.
Wunderbar!!! Alternative: 1. Buy direct flight to Germany or northeastern France (6-9 hrs). 2. Go to any bakery early in the morning. 3. Eat a different variety of sourdough bread every day for 1-2 weeks, or until (hopefully) sick of eating sourdough bread for a few months. WARNING: You will never again use the term "bread" for most other countries' offerings. OR Quebec's approach: Fast track 13000 French and German bakers for immigration and help them set up their businesses. Best tax dollars expenditure ever. 😊
I don’t get why all these sourdough videos show rest and pull multiple times and call it an “easy” sure, if you work from home, or only bake bread on weekends. Honestly sourdough is almost just as easy as regular bread if you want. Just takes a little longer to proof. Add ingredients. Wait for dough to rise, about 6-8 hours. (While at work, or play) then bake in the evening. Because of its slow rise time sourdough can actually be easier than instant yeast bread, because you can brake up the process, and get back to it when you have time.

Or can be kept in normal room temperature
The added whole wheat flour is good for color, but the bread tastes better with just the bread flour.
