There’s nothing better than fresh, warm baguettes straight from the oven — and today we’re making mini baguettes that are light, crispy on the outside, and fluffy inside. Perfect for sandwiches, snacks, or to serve with cheese and butter. This recipe is simple and only needs a few ingredients you already have at home.

Ingredients:

• 275 g strong bread flour

• 178 g water

• 7 g salt

• 3 g instant yeast

Recipe:

1. In a bowl, mix water with yeast. Add half of the flour and mix well.

2. Add salt, mix again, then add the remaining flour and combine into a shaggy dough.

3. Transfer to a clean surface, knead for about 5 minutes, cover and rest for 30 minutes.

4. Perform 2 folds during resting, then let it rise for about 2 hours.

5. Divide into 6 equal pieces (around 75 g each), preshape into logs and rest for 10 minutes.

6. Shape each piece into mini baguettes and place on a parchment-lined tray. Cover and proof for 40 minutes.

7. Spray with water, dust with flour, and score the tops with a sharp knife.

8. Bake: Cover with another tray and bake at 220°C for 6 minutes. Remove the tray, lower oven to 200°C and bake another 14 minutes until golden.

Notes:

• Covering the baguettes for the first few minutes traps steam and creates that classic crust.

• Always use a sharp blade for clean cuts on top.

• These mini baguettes are perfect for portion size — they freeze really well too!
