### 📝 Ingredients:
* 5 large chicken thighs (or a whole chicken)
* 2 crushed garlic cloves
* Salt and black pepper to taste
* 1 1/4 cups red wine (Burgundy or Pinot Noir)
* Fresh parsley, dried bay leaves, fresh thyme
* 1 onion, coarsely chopped
* 4 shallots (small red onions)
* 2 medium carrots, sliced thick
* 150 g mushrooms, sliced
* 100 g diced bacon or pancetta
* 1 tbsp olive oil (or vegetable oil)
* 1 tbsp butter
* 2 tbsp minced garlic
* 2 tbsp all-purpose flour
* 800 ml chicken stock (divided)
* 1/2 cup additional red wine
* Fresh parsley & green onion (for garnish)
Mashed potatoes (to serve)
3 cups peeled and cubed potatoes
Cold water (enough to cover the potatoes)
½ tbsp coarse salt
½ cup cold butter, added gradually
½ cup hot whole milk
