In this video we will make a traditional French dish the traditional way. You will need a drill and a baseball bat! 😉
Way bck when I was taught to rub the beef with tomato puree mixed with olive oil before broiling, has this fallen from favour or is there a reason? We also added 1 teapoon of black pepper corns for 4 litres of water. Every place had it's own "secret" for making stock but tomato puree with olive oil rubbed into the beef prior to broiling and peppercorns when adding the water where universal. This was late 1980's and early 1990's in essex and london. Thanks you for the recipe i'll give it a try this coming weekend, making a soup with the broiled veg and beef meat as well, waste not want not after all.

Not convinced about the flour – I have found that using a goodly amount of butter with the onions you get a lovely thickness to the soup – no other thickening required.
To remove far fast and easy i keep a piece of Metal in the Freezers Just dunk it into the broth and the fat glues on it

Noooo don't tell people about vegan options! If they don't eat meat they don't deserve food! Unless they where forces to not eat meat and now cannot, I can accept that, but otherwise, NOOOOOOOOOOO
if you want a meatier vegan broth try using something that'll give it a funk like miso or asafoetida (indian spice) or if vegetarian use parmesan rind
I do not understand the concept of broth and stock and I am french… Do you waste all the vegetable or meat ?! If no then it is very poorly cooked and it is therefore not good. It feel like a very big waste of food.

1 hour at 250° will always turn your meat into bitumen. What is the actual temperature and time? When you took out your baking sheet there were water, your vegetables and meat were boiling, not baking. Why are you lying?
Did you make soup, or was it an onion crouton dish? One more thing, if your soup is too sweet, then forget the sugar…unless you health plan covers diabetes. One good thing to commend you on was the beef broth. Note that looks delicious by itself. Bon appetit!

Doesn’t the ground meat make the broth Cloudy chef ? That’s what I was taught many years ago in Chef Saucier training. Very interesting using ground beef. I will try it.

It isn’t the beef that makes the soup. It’s a good bro, vegi stock or chicken stock where all the flavours get infuses. Sometimes les is more😉

My girlfriend is vegetarian and I made a French onion soup using vegetable stock. Used red wine, Worcestershire sauce, and a teaspoon of Better than Bouillon vegetable paste. Came out better than any beef stock French onion soup I’ve ever had including from Paris.
The ONLY QUESTION I had was "how to serve a soup that's been covered in bread in a giant family sized dish into a single serving bowl that could actually be presented to an individual"…
…and that was the ONLY PART of the video he cut out. Clearly a messy trouble ridden situation of "well let's take off the bread that dripping soup from the bottom, put it to the side, grab a small spoon because the soup isn't deep enough to use a ladle, tilt the pan because there's not enough liquid/onions to be scooped out, then place it in a bowl then re-cover it in the individual bowls with the dripping bread that you set aside"…
…maybe just put the soup in an actual individual serving bowl BEFORE YOU PUT THE BREAD AND CHEESE ON TOP of it. Unless you intend on eating out of it like it's a pig trough along with the rest of everyone… good luck with that.
