  1. ROOKIE!! Set ice bath first with salt. Poaching -NOT boiling water 180-190 F! CLARIFIED BUTTER NOT WHOLE – higher smoke point no solids to burn, Color shows ignorance. OH – learn to pop the yolk! , holy cow that is NOT Buerre Noisette! It should be brown not golden! Bullion omg STOP!

The boiling eggs got me remember that warm morning when I got up for studying and preparing for my exam which was in summer and I thought that I needed protein to focus so I went to boil some eggs but all of sudden I got to sleep all on my books then I woke up by the smell of burning eggs they were literally boiled for 4 hours straight!

  3. I was making eggs when my mom was talking about poached eggs, I asked if she wanted me to make one, this being the first time I ever even try to make one, she said yes. I immediately went to this video and nailed it first try. Thank you so much Nick.
