Why Béziers
First things first—it’s not actually in Provence. I just say it because to me sounds glamorous. Béziers is further south, close to the Spanish border. It’s one of the oldest cities in France, originally founded by the Greeks.
The first time I visited was on New Year’s Eve in 2017. We arrived very late at night and, after a late dinner, stayed at my sister’s place, which at the time wasn’t fully furnished or ready for comfortable living.
The next morning, I went on a mission to find take-out coffee, since we didn’t have any at home. Let me tell you—take-out coffee is not exactly common in small French towns. After wandering for a while, I finally found a spot in the town’s market. It was around 8 a.m.
While waiting for my coffee, two older gentlemen sat down at the table nearby. From a plastic bag, they pulled out a bottle of white wine and a pile of oysters. They started chatting, opening oysters, sipping wine. At 8a.m. I looked at them, and all I could think was: “This is exactly how I want to grow old.”
From that moment, I knew—I wanted a little place of my own in that charming town. And that’s where it all began.
