That will safely hold four plates that are heavy. This videos method looks like you could carry six plates possibly! I use this but it's actually USELESS when your plates are either salad plates, or the food is too bulky to not touch the other plates. This is only useful when you serve little amounts that sit at the center of the plate.

This is how we trained new servers to carry as well when large trays were unavailable due to high beverage orders because beverages needed trays more often than food which we would just grab with our hands because the rush would be so overwhelming, we wouldn’t have time to search for trays for food because the bartenders often always had them ready for loading drinks. 😅
I find easier using my arm instead of my fingers and supporting the start/end of each plate on the first and serving the highest plate on your arm first if that wasn’t obvious
