This inspired me to try cooking with leeks for the first time. Melted mine down the same way with olive oil. – added lemongrass, a little ginger, green onion, & just touch of garlic. I decided to add beech mushrooms next, then some ricotta/ lemon zest ravioli. I never would have tried this combo or leeks without your video. 😋🥟🌱
