Ingredients
– Aloo (potato) peeled 1kg Big size
-Corn flour 2 tbs
–All-purpose flour (maida) 1 tbs
-Oil for frying
-Red chilli flakes (koti lal mirch) to taste (optional)
-Salt (namak) to taste (optional)
-Chat masala to taste (optional)
Directions:
-Wash, peel, and cut potatoes vertically into pieces. You can also use a curly fries cutter (optional).
-In a separate bowl, add water and potatoes. Let it rest for a few minutes, then strain.
-In a pan, add water and bring it to a boil.
-Now, add potatoes and cook them for 3 minutes. Stir the spoon continuously.
-After 3 minutes, strain the fries and let them cool.
-Remove all the water from the fries with the help of a kitchen towel by pressing it gently.
-After that, in a strainer, add fries, corn flour, and all-purpose flour and coat well, then shake well to remove excess flour.
-In a deep-frying pan, heat the oil, and add fries on high flame. Fry the fries for 8 minutes, then takeout and let them cool (at this point, you can also freeze them). Repeat the frying process and fry it for 3 minutes on high flame.
-Bring out the fries. Sprinkle red chilli flakes, salt, and chat masala and mix well.
-Serve the crispy Fries with ketchup and enjoy.
Tips and Tricks:
-To make the fries crispy, do not coat the cornflour and all-purpose flour on hot-boiled fries. Always coat them after cooling.
