Learn how to make eggless macarons, Recipe and method given below. RECIPE: For around 25 Macarons, I have given two tasty flavours PAAN and CARAMEL filling below

FOR THE MACARONS SHELL:
70gms – American Garden Aquafaba (
30gms – Castor Sugar
80gms – Almond Flour
100gms – Icing Sugar

FOR THE MACARONS FILLING:
200 gms White Chocolate Ganache
200 gms Brown Chocolate Ganache
1 Tbsp Gulkand for PAAN flavor (
1 Tbsp Caramel for CARAMEL flavor

METHOD for Macarons Shell making:
1. Shift together Almond Flour and Icing Sugar and keep aside
2. Beat Aquafaba at medium speed till it becomes little frothy (I used a stand mixer, you can even use hand blender)
3. Add castor sugar gradually with spoon while beating. It tool around 15 minutes to get stiff peaks
4. Then fold in the almond Mixture to the aquafaba in three times.
5. Add any colour at this point of your choice
6. Pour in a piping bag with a round nozzle and pipe them on a macaron sheet
7. Let it set under AC or FAN for minimum 30 minutes
8. Then bake the sheets for 40 minutes at 120 Degree C (Bake in lower rack)
9. Let the macaron shells cool completely.

Method for macarons Filling:
1. For PAN flavor – Mix white chocolate ganache with Gulkand (Amount as per taste)
How to make caramel macarons, For CARAMEL flavour – Mix salter caramel with brown chocolate ganache
3. How to make Ganache – Mix 2 parts cream with 1 part of chocolate

Avoid these common mistakes:
1. Make sure the aquafaba is beated to stiff peaks and not soft peaks
