Preparation time: 45-60 minutes
Ingredients:
About 1/4 cup shallots, finely chopped
About 2 Tb. celery, finely chopped
About 2 cups carrots, coarsely chopped
About 1 Tb. ginger, finely chopped
1/4 to 1/3 cup dry sake (or white wine)
About 32 oz. chicken stock
A few sprigs fresh thyme, tied with kitchen string
1 tsp. cumin
1 cup heavy cream
2 Tb. Calvados (or Amaretto)
Kosher salt
White pepper, ground
