Other way with the best is grind it and mix the borscht spices in ,then make patties and dehydrate them for a while, not super dry ,but regular . That will make quick soup basis or similar .
Also on the Pierre Franey episode of Savoy region which is here on YT ,the chef there make similar ravioli but they are steamed .
