My little girl and I made French macarons. This is a perfect treat for Valentine’s Day.
Here are the ingredients:
FOR THE MACARON COOKIES:
1/2 cup powdered sugar
3/4 cup almond flour (you cannot use regular flour)
1/8 tsp cream of tartar
1/4 cup granulated sugar
2 egg whites (room temperature)
Beat the egg whites until it starts to form bubbles. Then add the cream of tartar. Then beat again and gradually add the granulated sugar. Total beating time is 8 minutes. Do not over beat the eggs.
Then sift together the powdered sugar and almond flour and powdered sugar. Fold this dry mix to the egg whites gradually about half or third of a mixture at a time. Fold the mixture for about 50-60 strokes. You may add food coloring if you want. Then pipe onto your baking tray (line with parchment paper) Then let it sit for 30 minutes before baking so it forms a skin around the cookie. After 30 minutes, bake for 15-18 minutes at 300 deg F.
FOR THE FILLING:
2 egg yolks
1/4 cup granulated sugar
1/8 cup milk
1/2 stick of butter (4 Tbsp)
Mix all the filling ingredients in a pot except for the butter. Then heat up the mixture until the custard thickens like a pudding. Let it cool. Then beat the butter separately until fluffy. Then add the cooled custard mixture into the butter. Mix again. Then put the mixture in a piping bag.
Make sure the cookies are cooled before assembling them with the filling. You can also use any filling you want. It could be jam, chocolate ganache, or just plain buttercream frosting.
