NADRÈ CHURMÈ | KASHMIRI STYLE FRIES

This is my version of Kashmiri-style Nadre Churme — crispy crushed lotus stem tossed in bold, tangy spices. Way better than French fries!

Ingredients:
For churme:
2–3 lotus stems (cleaned, cut into large pieces)
1–2 tbsp rice flour or cornflour (optional)
Salt, to taste
Oil for deep frying
For masala mix:
½ tsp salt
1 tsp chaat masala
½ tsp red chilli powder
½ tsp coriander powder
½ tsp roasted cumin (zeera) powder
½ tsp dried mint powder
Lemon juice, to finish
(Adjust the amounts according to your preference)

Method:
1. Prep the Nadur:
Gently crush the lotus stem pieces using a light hand — don’t mash them.
2. Optional Coating:
Toss with a bit of rice flour or cornflour and salt for extra crispiness. You can fry them directly as well.
3. Fry:
Deep-fry the crushed Nadur pieces till golden and crispy.
4. Spice Mix:
Mix salt, chaat masala, red chilli powder, coriander powder, cumin powder, and dried mint.
5. Assemble:
Sprinkle the masala generously over the hot Nadur churme.
Squeeze lemon juice on top, toss well, and serve immediately!

  1. Using steel scrubber for cleaning stem lotus is very dangerous. Small and micro particles of steel will definitely go into the final food. Steel scrubbers are already being avoided in restaurants. Rest you know better.
