  4. Only thing I'd suggest to make it easier to torch is to dust it with sugar then tap everything off that didn't stick to the custard surface. You want an ultra thin layer.

  5. Use a wet paper towel or silicon hot pad underneath a mixing bowl so it doesn’t spin around under your whisk. It’ll help maintain consistency when you temper your eggs.
