Panda Macarons

Ingredients

Macarons:
1 cup confectioner’s sugar
¾ cup almond flour (not almond meal)
2 large egg whites
pinch cream of tartar
¼ cup superfine sugar
1 tsp vanilla extract
pink, black and green food coloring

½ cup Nutella
black edible ink pen

Directions

Make the macarons:
1. Combine the confectioner’s sugar and almond flour in a bowl, then sift 3 times.
2. Place the egg whites in a large bowl and beat with an electric mixer until foamy. Add the cream of tartar, then beat until soft peaks form. Add the superfine sugar and beat on high speed until stiff peaks form. Add the vanilla extract and gently mix to combine. Sift the dry mixture into the egg mixture and gently fold to combine. Divide the batter into 4 bowls. Leave one bowl white and dye the other bowls black, pink and green.
3. Place the batter into a piping bags and snip a medium-sized hole at the ends. Line a baking sheet with parchment paper or a silpat baking mat.
4. To make the pandas, pipe white rounds onto the baking sheet. Pipe black spots as eye patches and ears. To make the accent macarons, pipe hearts with the pink batter and leaves with the green batter.
5. Tap the baking sheet on the counter several times to release any air bubbles. Allow the macarons to rest at room temperature for 30 minutes.
5. Set the oven to 375F and heat for 5 minutes, then reduce to 325F. Place the macarons in the oven and bake for 6-8 minutes, rotating the baking sheet halfway through baking time.
6. Allow the macarons to cool completely on the baking sheet. Leave the macarons at room temperature overnight to stiffen.
7. Use the edible ink pen to draw the panda’s eyes and veins on the leaf.
8. Place the Nutella into a piping bag and snip off the end, creating a medium-sized hole. Pipe Nutella onto half the macarons and place a matching macaron on top. Enjoy!
