this is called Bugnes. Beignets is what you call Donuts in USA or UK. This is Bugnes lyonnaises. thank for uploading this. I wish to see more Vegetarian receipe that is why I suscribed. Thanks if you read my comment allrecipes.

when I went to new Orleans we went to a cafe that had these. it was a thousand degrees out and humid af. then The cafe was outside too. They gave us water that was a babies portion, they didn't even give us enough water. it was awful, and I was dehydrated. the bignits were good though. but I can't understand why they would give us the little amount of water that they did.

Thank you so much for posting this. I have always wanted to try beignets and to make them at home. I'm curious here, is the shortening made from pork? I don't eat pork. Can I use vegetable shortening instead? I live in Australia so the only vegetable shortening brand that I know of is Copha.
