Gougeres (French Cheese Puffs)

Ingredients:
½ cup water
2 tbsp unsalted butter
½ tsp salt
½ tsp black pepper
½ cup flour (I used gluten-free)
2 eggs
½ cup – 1 cup Gruyere, shredded, depending on how much you want
2 oz Brie cheese, cubed

Directions:
Preheat the oven to 400 F
In a saucepan on medium heat, add the water, butter, salt, and black pepper
Once it starts to boil, add in the flour and mix until a ball of dough forms
Keep mixing until a thin film appears on the bottom of the pan, then remove from the heat
Add the dough to a bowl and let cool for 1-2 minutes
Add in the eggs one at a time, mixing thoroughly between each addition until the dough comes together
Cover a baking tray with a piece of parchment paper
Place 1 tablespoon-sized balls of dough onto the paper, leaving around an inch of space in between each one
Place a cube of Brie cheese in the center of each ball, then top with another tablespoon-sized portion of dough on top and run a spatula along the edges to seal
Bake for 20-25 minutes until golden brown

Enjoy!!

I was wrong, but it made sense. Especially in Tokyo, trains are crowded often. Also, the work culture is insufferable.
