Aram Yun, a Korean born chef now leading the pastry program at Hector’s Deli in Melbourne gave us two days of her life to create this film, and we couldn’t be more grateful.
Her path through kitchens including Chin Chin, No.8, Nobu, Steat Cafe, Kudo, Bloomwood and a string of other headlining venues has led her to this moment — a new chapter in a city quickly becoming known for more than unforgettable sandwiches.
What struck us most wasn’t just her technical skill or discipline (although excellence resolves around everything she does), but her willingness to start again — to depart from fine dining and learn pastry from the ground up. Where Bloomwood offered a blank canvas for Aram to spill colour through Asian inspired numbers, this next season is about mastering European and Western classics with careful restraint and unrivaled consistency. Aram calls it “changing my colour” — not chasing prestige, but staying open, curious, and embracing every opportunity to grow.
She was generous in letting us film her during a real service — without filter, without performance. From her reflections on grief and family to the way she mentors her team, there’s a quiet strength in the way she moves through both pastry and life.
This isn’t a story about reinvention. It’s about learning to carry who you are, even as your environment changes.
We hope someone watching this finds the courage to begin again, or at the very least, to keep going.

i worked at streat when chef aram was there, and though we never met i remember her pastries well. when the crates arrived early in the morning at the cafes we were just in awe. they were beautiful. she changed the game
