Ratatouille is another south of France dish, I ate all my childhood.
The summer veggies, courgette ( zucchini), aubergine ( egg plant), tomatoes, bell pepper, usually red or green but I like to shake the things, I had a yellow one 😉, my dad was growing in our garden.
It always reminds me of my region when I eat a ratatouille, even if mine is more simple and quick to prepare than the real one.
If you want to cook the authentic one, you need to cook the courgette and aubergine in olive oil first and reserve them.
In the same pan you cook the onion, the green or red pepper and the crushed garlic. After 5 min, add no peel chopped tomatoes, on medium heat, cook during 10 min, stirling regularly.
Add the reserved courgette aubergine. season with salt, pepper, Provence or Italian herbs ( rosemary, thym).
Let it simmer at low heat during 40 mn.

– 1 Courgette ( zucchini)

– 1 green pepper or red or yellow like mine 😉
– 2 ripe tomatoes
– 1 onion
– 3 garlic cloves
– olive oil
– salt, pepper
– Provence or Italian herbs or like me fresh rosemary and thyme that I find way more tasty.
– some recipes add sugar, I don’t. Only veggies taste is the best.
