Peel and cut 4 large potatoes into thin sticks. Soak them in cold water for 30 minutes to remove excess starch. Drain and pat dry thoroughly. Heat oil in a deep fryer or heavy pot to 325°F (165°C). Fry the potatoes in batches for 4–5 minutes until soft but not browned. Remove and drain on paper towels. Increase oil temperature to 375°F (190°C) and fry the potatoes again until golden and crispy, about 2–3 minutes. Drain and sprinkle immediately with salt.
