  2. I’m in no position to question an actual Italian, even less a Pasta Queen. However, I’ve checked other sources saying RICOTTA is made from the whey. So, once this is done, you have to boil the whey once more.

    I’m so confused

  3. No. Ricotta is "recooking" whey from what you did. (You're eating the curds.) To do ricotta, the whey is heated (usually after a small addition of whole milk) and some rennet, and the remaining curds start to coagulate. And that's ricotta.
    "C'mon you can make your own!"

  4. that's novella not ricotta.
    ricotta is made from whey only, and it's really amazing… while from milk/cream you will get a lot of curd too that it's rubbery.
    You will only get about 65g of ricotta for each liter of whey so I understand why using milk can be easier for making ravioli… but when you want to eat it real ricotta is a lot better

  5. We also make it in Pakistan & india 🥰 it’s just name is just different. I live in uk & stopped making it. My mom always made this ( she is no more)And I didn’t know where to buy as I didn’t know it’s called ricotta in the West

    I just love this world 💕🎼 and s much to learn & love
