  1. Chicken thighs are far better when cooked longer to 190-200 internal. All the fat and connective tissue renders and the flavor is much better.

  2. Chicken Thighs (bone-in/skin-on)
    1/2 cup Soy sauce
    1/2 cup Rice vinegar
    2 tsp Minced/chopped garlic
    1/2 tsp red pepper flakes
    1 tsp Sesame oil
    1/4 tsp White pepper
    add 4-5 tbsp of marinade to the chicken thighs before adding honey
    3 tbsp Honey
    Salt & black pepper (to taste/optional)

    Starch slurry: 1 tsp arrowroot starch + 1 tbsp water
