To celebrate our friend Dom‘s brilliant new book: Upside Down Cooking, Eli’s made the French Onion Soup Tarte Tatin (Page 56-57 for anyone who fancies giving this a try!). Not only is it a perfect example of the simplicity and flavour that can be achieved with Dom’s upside-down cooking method, it also paired perfectly with our new Blackberry Vinaigrette.

The gloriously caramelised shallots with thyme, rosemary, nutty gruyere and golden puff pastry are an absolute treat and one we think you’ll want to repeat time and time again. A beautiful tart that’s full of flavour. So good!
