I have Keller’s books and have learned a lot. But will never pay $ to eat there. So ridiculously over priced and Michelin in general is just people playing with food. If I have a beautiful side Of salmon I’m not dicing it up and putting it in a mini cone. I’m grilling it or pan searing it with a glass of wine lol.
