Not sure it's very useful to pay for a local guide service, if the guy doesn't know the place, is not French, and only goes to tourist trap places…
As an example, Pierre Hermé and Ladurée sell expensive and bad quality frozen macarons. Any (real) parisian would know not to go for this kind of scam but go spend twice less for way better real home made macarons from local bakeries.
Also, absolutely no one in France considers cheese as being a dessert. Never heard that bullshit! 🤣
