  1. Ingredients:
    For the onion base:
    * 2 large onions
    * 1 tbsp olive oil
    * 1 tsp butter
    * 1 tsp sugar
    * 1 tsp balsamic vinegar
    * salt
    For the beef:
    * 300g lean beef mince (5% fat)
    * 2 tsp garlic puree
    * 1 tsp Worcestershire sauce
    * 1 beef stock cube
    * 200ml water
    * Black pepper
    Pasta
    * 75g pasta
    * 80g Gruyère or mozzarella (I couldn’t get Gruyère)

    Method:
    👉Heat olive oil and butter on low heat. Add sliced onions and salt. Cook slowly for 15–20 minutes, stirring often. Add sugar and vinegar halfway through
    👉In another pan, brown the beef mince. Add garlic, Worcestershire sauce, and black pepper.
    👉Add stock cube and add 200ml water. Let simmer 5–10 mins until thickens then Stir in caramelised onions.
    👉Boil pasta in salted water until just under al dente. Drain and save 100ml of pasta water.
    👉Mix pasta, onion-beef mixture, and a splash of pasta water. Pour into a baking dish. Layer over Gruyère or mozzarella.
    👉Bake at 200°C (180°C fan) for 15–20 mins until golden.
