This French carrot salad is a classic from everyday French home cooking but with a twist. It’s fresh, crunchy, and full of zing from the lemon Dijon dressing. The apple adds natural sweetness, while the walnuts give it a lovely crunch. It’s the kind of dish you find in a French bistro next to a quiche or roast chicken. It takes no time at all to make with a food processor, but even a box grater will do the job. Carrots are packed with vitamins, so it’s also healthy and great for your skin. If you’re walnut aren’t French giving them a quick toast will enhance them. I like to top it with a poached egg for a light meal, I do that a lot for a quick healthy lunch! So simple, yet so full of flavour. My dog Kenji wasn’t impressed but I’m sure you will be. You’ve got to try this!

  5. Looks so fresh and no doubt tastes delicious. My husband always shared an apple or a pear with our two dogs and they also loved raw carrots. Sadly our two boys are no longer with us. We miss them both so much and our holiday to Holywell Bay, Cornwall U.K. this year felt so empty without their presence.
