aaaah the aioli, the dish which smells good the south of France … Just the name of it inspires, imagine ourself on the edge of the Mediterranean with our sunglasses, cicadas singing and a good pastis in the hand … In short the aioli has a little air of vacation for the Parisian that I am … But for the adorable Marseillais (and all the inhabitants of the South of France) the aioli it is one of the dishes that one savored all the year.
