I found a cold fry method that has surprised me and made fries easy.
Just the fries in cold oil. Wait until it bubbles a bit then set the timer for 20 minutes. Don't touch them. After 20 stir them around to make sure they are loose and then 1-5 minutes more depending on how crisp you like them.
