Just buy a peeler that is built like a knife and peelnthe potates lime ypu would using a paring knife. It is faster cleaner and much easier. If you need a fork to help peel a potato you have no gd business peeling a potatoe.
A good technique, but given the amount of oven-time they require, it's tough to time them with the rest of the meal..And you don't need to peel the potatoes.

Blanching Water:
6 quarts water
2 tbsp white vinegar
1 1/2 tbsp kosher salt
If i use that much oil i might just fry them ..
So you had a pot of hot oil. Could’ve fried them. Not understanding what this is about
