🏴 Potato Salad 🏴
This is the potato salad mum always made. It’s simple and delicious, and perfect for any occasion. The crispy bits were my addition!
Approx 12 medium sized potatoes
2 tbsp olive oil
1 tbsp red wine vinegar
1 tsp Dijon vinegar
Pinch salt and pepper
2 shallots
2 tbsp natural yogurt
2 tbsp mayonnaise
Squeeze of lemon juice
Approx 4 tbsp chopped soft herbs (I used chives and parsley)
Additional salt, pepper and seasonings for the crispy potato skins
Score a shallow line round the belly of your potatoes with a sharp knife before bringing to the boil in cold salted water. Simmer till perfectly tender. Cover with a tea towel and steam for 5 minutes while you make the French dressing. In a large bowl, add the olive oil, red wine vinegar, mustard and two finely chopped shallots (also season with a little salt). Mix till combined.
Peel off your potato skins and keep aside, then chop potatoes into chunks and place, while still warm, into the dressing. Stir well to coat. Add your yogurt and mayo and stir again. Add a massive grind of black pepper then your chopped soft herbs. Stir well and set aside.
Coat your potato skins in a little oil, season then air fry or bake till crispy. Season up with any spices or flavourings you like, I used vinegar powder, but could be paprika, chicken salt, curry powder, anything you like! Sprinkle over your potato salad and eat with anything you fancy. Best served room temp.
If you have any left, try roasting with a little olive oil – delicious!
